I made a terrific recipe yesterday.... I grilled corn on the cob, bell peppers, scallions...under the broiler til they were a bit charred. Pealed the skin oof the peppers and sliced them in slivers, cut the corn off the cob.....sauteed garlic in a teeny weeny bit of oil....added the corn, scallion, peppers a bunch of cherry tomatoes....after a while... I added two zucchini's sliced ....cooked a bit more ...then a whole head of dino kale chiffonaded....some tomato paste, lemon juice and some vinegar....and some veg. broth...and spices....cooked till all the kale was wilted. Then I take a very smal amount of pasta...cook it... add as much of my vegeatble mix as I want...loads.... and soy "parmesan" cheese.....really delicious.... you have the crunch of the corn...and the zucchini..and interesting texture from the scallions and peppers. Yumm...I think this would fit his philos NICELY..... ALSO MY IDEA OF ADDING MY SALAD RIGHT INTO THE MAIN COURSE.

Oh...And I also add a lot of dried red pepper to the mix! MY ADDED SALAD idea is this: I make a pasta or rice and vegetable dish...and a large salad. I then add the salad right on to my dinner. It adds crunch..and freshness..and in the winter when its cold..the salad feels more comforting this way.
